adapted from Paula Deen's Tastes Like Lasagna Soup
1 pound ground chuck
1 (32-ounce) box chicken broth
2 (14.5-ounce) can petite diced tomatoes
1 (15-ounce) can tomato sauce
2 teaspoons Italian seasoning
2 cups broken lasagna noodles
1 (5-ounce) package grated Parmesan cheese
2 cups shredded mozzarella cheese
In a large pot, brown meat. Drain. Stir in diced tomatoes, tomato sauce, and Italian seasoning. Bring to a boil over medium-high heat; reduce heat and simmer 20 minutes. Add noodles, and simmer until noodles are tender. Stir in Parmesan cheese. Ladle in to bowls and sprinkle mozzarella cheese on top. Serve with bread or salad.
If you look at Paula's original recipe you'll see that I simplified it A LOT! It was still yummy. And, I don't know about you but, I always have a few noodles left in the box after making lasagna. This recipe is great for using those up.
