Monday Menu 5*23

We have another unique two weeks ahead.  We've got Memorial Day weekend and a 4-day vacation coming up so our dinners aren't going to be too exciting.  It's going to be one of those finish-all-the-milk kind of weeks.

Monday - homemade pizza and salad

Tuesday - Spaghetti and salad

Wednesday - Beef Enchiladas and leftover salad

Thursday - ham sandwiches and chips

Friday - Go out to eat

Saturday - Fend for yourself / leftovers

Sunday - Dinner at Grandma's (cookout)

Library

I'm going to try REALLY hard to instill some sort of schedule this summer.  Maybe if I put it in writing we'll actually do it.

The local library system always has a summer reading program for kids.  We started a little early by visiting one of our libraries last week.  Our oldest is finally at the age where she looks for certain topics or authors.  The other two just grab and run.  And the DVD section is still everyone's favorite. 

The plan: Visit a different library each week and read more than we watch.

Healthy Snacks

Every few months I freak out and eliminate all kinds of junk food from our house. It's usually an effort to decrease sugar and fat in our diets, which is always good, but this time I also feel the need to reduce processed and pesticide-laden food from our diets as well. Unfortunately, small town Oklahoma doesn't afford too many options in the organic food department and I just don't have time to grow my own food. So, we're making small changes. I buy organic and locally grown foods when I can and we're trading in Chips Ahoy for fruit. These are some of our recent concoctions. Bare in mind, I said small changes. I know we can do better and I plan to slowly work in that direction. I don't want my family to go into shock by completely eliminating sugar and caffeine from their diets.

Trail Mix - this stuff is the devil...meaning I can't stop eating it.  It's also one of those not-so-healthy snacks but it's gotten my kids to try new things which is a giant leap in to healthy eating for them.
Ingredients: Teddy Grahams (you could totally buy organic grahams)
Pretzels (REALLY low fat, like zero)
Yogurt covered raisins (which I think are kind of deceiving.  they don't have much nutritional value)
Almonds (these actually are healthy)
white and milk chocolate chips (because we can't eat anything that's not chocolate apparently.  you could use dark chocolate)


Fruit Pizza - this one can become healthy over time by using a different base and spread.  My kids just aren't open to it right now.
Ingredients: Sugar cookie (I bought individual sugar cookies to give everyone a reasonable portion)
Frosting (yikes)
fruit of your choice (again, could be organic)

Apple Rings - This one was a hit.
Ingredients: Apples, cored and cut into rings
Peanut Butter ( I buy "natural" peanut butter, not sure if it's any better than regular)
Chocolate chips (The chocolate chips can slowly be traded out for raisins)

Ants on a Log - um, they just licked the peanut butter and chocolate chips off.
Ingredients: Celery
Peanut Butter
Chocolate Chips (or raisins)

We also had smoothies one night after dinner -  Ingredients: Yogurt, Fruit, Juice, Ice - and the kids loved them.

Theme Thursday: Something for Mom

This week's theme for Theme Thursday is Something for Mom. My kids are always bringing me little surprises, some of which I don't really want (i.e. bugs, poop, boogers) but I always get extra special gifts on Mother's Day. This year hubby and our oldest went shopping and picked me up a wireless radio transmitter for my iphone and the first season of Glee on dvd. These are very special gifts but the ones that I enjoyed the most were the ones the girls made at school.


A picture of mom, a flower picture holder thingy, and two "mom" wooden spoons. Those ladies will live in my utensil crock and supervise my cooking.

Thursday - Beans and Cornbread

Friday - Chili Cheese Tator Tot Casserole (from Mommy Hates Cooking)

Saturday - ?  Probably Senor Salsa because by this point in our week I need a giant maragarita and some guacamole.  True story.

Sunday - Grandma's

Monday - Tacos

Tuesday - Breakfast (eggs, bacon, biscuits)

Wednesday - Baked Pasta

Thursday - Sandwiches

Friday - pay day / go out to eat

We have TONS of evening activities coming up so I may not end up cooking half of this stuff.

Theme Thursday: Desserts

I've been slacking in a lot of things lately.  Blogging being one of them.  I've been EXHAUSTED for about 3 weeks now.  But, I'm starting to figure out why I'm so tired all the time.  In the middle of typing that first sentence I realized it was a little too quiet and I found my three year old twins halfway down the road walking themselves to Grandma's house.  They must have forgotten that I told them to stay ON the porch.  Geez.  On to the theme...

In my spare time....BAHAHAHA! spare time...anyway, I like to decorate cakes.  I've done a few for other people, but I mostly just do cakes for us...birthdays, special occassions.  This is a Mother's Day cake I made this weekend for my husband's Aunt and Cousin.  I'm not great at piping frosting but I did recently receive an awesome Pampered Chef Easy Accent Decorator from my good friend Cindy that definitely makes it easier!
