Tulsa Air and Space Museum

We visited the Tulsa Air and Space Museum this week to supplement our U is for Up lesson...and just 'cause it's fun.  We took PaPa along too.  He digs this sort of thing.

They have super awesome volunteers/guides.  These guys love to talk to the kids about aviation.

The movie at the planetarium.  It made us all dizzy.

I think they call this Tinker Town.  It's the upstairs of the museum and it's full of hands on engineering type things for the kids to experiment and build with.

Easy Cheesy Enchiladas

These are SO good.  And so easy!

Ingredients:
Tortillas - we use flour tortillas
McCormick Enchilada Sauce mix
1 8 oz can tomato sauce - we use salt free
1 1/2 cups water (for sauce mix)
8 oz cream cheese, softened
8 oz cheddar cheese
spinach if you want

Prepare sauce as directed on package.  While sauce is simmering, mix together cheeses and spinach.  Pour 1/3 sauce in baking dish.  Spoon cheese mixture in each of 8-10 tortillas (depending on how tight you cram them in there).  Roll up and place seam down in baking dish.  Top with remaining sauce and cheddar cheese.  Bake at 375 for 20 minutes.

Happy Birthday Dr Seuss!

We love Dr Seuss!  His stories are easy to read, great for teaching kids to read, contain valuable lessons, and they're just FUN!


Green Eggs and "Ham"  (just add green food coloring when you scramble your eggs before cooking)




 Cat in the Hat hats!  (I learned a valuable lesson on this one.  Well, two lessons really.  One, when you're down to your last piece of red paper cutting it into squares makes it go a lot farther.  Two, glue is heavy.)



Cat in the Hat marshmallow hat snacks!  These are the Smore's stackers and a can of red squirtable frosting.  Super healthy.


We also watched the Cat in the Hat A Thon on PBS.

Mommy's Spaghetti

Everyone thinks their mom's spaghetti is the best.  My kids are no exception. 

Mommy's Spaghetti
serves 4-5

1/2 box thin spaghetti
1 15 oz can Hunt's tomato sauce
pinch of Italian seasoning
pinch of pepper

Boil noodles and drain.  Pour sauce and seasoning over top and cook another few minutes.  Done.

Our local grocery store has these boxes of pasta on sale this week for $1!  Hello, cheap dinner!
